As someone who is super busy, but really wants to eat healthy (and not spend money out all the time) I have found that weekend food prep is by far the biggest time and money saver. If I could only make one lifestyle change I would make this a key part of my week. I try to spend part of my Sundays shopping, slicing and cooking up food for the week. These recipes are some of the fastest that I have in my repertoire. Hummus takes about 10 minutes, granola bars just take 5 minutes (plus freezing time) and the chicken soup is a crock pot invention that takes only about 10 minutes of active time.

Sunny Saturday breakfast

I love our weekends. Work is hard, but I love it. I just get so exhausted by Friday that I really need a weekend to recharge my batteries. Do you ever feel that way?

We try to take the time on weekend mornings to sleep in a little extra if our bodies let us, to eat breakfast at 10am if we can manage it, to spend a quiet morning drinking glasses of tea. These quiet mornings are my favorite thing about the week.

Easy Fried Rice // Do All Things With Love

My favorite recipes are all ones that let you use up whatever might be in your fridge, freezer or pantry. For example, Minestrone Soup is one where all you need is kidney beans as a base and you can then add whatever other veggies and/or noodles and/or meat that you want. My Homemade Pizza is the same way. Any kind of random vegetable, sauce or protein you have laying around can go on it. Well, last week I added another favorite to my list: fried rice! All you need is rice and at least one egg, then just add whatever vegetables and/or meat to it  and voila! Baked Oatmeal // Do All Things With Love

Last week I discovered a great recipe for baked oatmeal, I won’t call them cupcakes, but muffin-shaped oatmeal. Perfect for a Healthy October menu! It’s cooked/baked rolled oats mixed with mashed banana, some sweetener and whatever extra additions you want to throw in. My first version I just added some cinnamon and chocolate chips, but this morning my second batch I added walnuts (from the farmers market!), raisins, vanilla extract, chocolate chips, and coconut oil. I like that this is a fairly healthy breakfast to grab in the morning to eat with some fruit or eggs. Read the rest of this entry »

Every year for Christmas we had neighbors who brought us Danish Kringle bread to eat for breakfast. It became a holiday tradition. After some time I started baking them for us and to give to friends. This is the recipe I’ve been using for a number of years.
